I am definitely one for a good cocktail, but usually stay within the safe confines of a Jack n’ coke or a vodka cranberry — nothing too fancy. However, Seven Saints in Champaign has some uniquely delicious signature cocktails that had my palate encountering something a bit more thoughtful and complex. I spent a recent Tuesday morning with General Manager Anne Clark who showed me how some of their original cocktail recipes are made. A unique blend of ingredients and an attention to the step-by-step preparation of each drink is key to bringing out the complex flavors and, as Clark stressed, striking the balance between them.
