Happy Lemon has bubble waffles, boba drinks, and lemon slushies

Square waffles are out, and rounded waffles are in. After just one bite of Happy Lemon’s bubble waffle, I was hooked. The bubble tea store’s bubble waffles come in a few flavors (chocolate, cheese, matcha, and Oreo), but I chose to order the original ($5.75), and it was so yummy.

The waffle’s airy, egg-shaped bubbles had crispiness to the curve and a soft, sweet inside. Though dipping sauces were available (for additional cost), this bubble waffle needed no syrup, no nothing. The cute yellow sleeve encouraged immediate eating. Biting into the bubbles and popping them was so satisfying. Made with tapioca flour, the waffle was chewier and a little different flavor than diner waffles, a uniquely fun street food.

I also got a lemon slushy ($5.75), too. The drink came with lychee jello, but I added brown sugar boba ($0.75) because all the signs for boba in the boba shop made me hungry for boba. Happy Lemon’s lemon slushy was a gussied up icy lemonade. I loved the little jello pieces, and no regrets about adding the boba because those chewy tapioca pearls were delicious.

Happy Lemon has no dine in, but there are three yellow chairs for those waiting on orders. Diners can order a variety of drinks (milk teas, lemonade, slushies, smoothies, and more) at the kiosk, at the counter, or online. This Champaign location opened in October 2023.
