It’s finally here! Late July is peak produce time at the Champaign and Urbana markets and I am here for it. Sweet corn, peaches, tomatoes, green beans…so much goodness to behold. I throw some CI Bakehouse bread in the mix and make my favorite summer meal: BLTs, corn, and peach cobbler.
Don’t get me wrong, I do love the strawberries and asparagus the earlier portion of the season, but this is the time that I wait for all summer. Make sure you hit the Urbana Market at the Square on the early end if you want some of that corn, it tends to go fast.
