Our local cheese at Chicago’s Whole Foods

During a stop at Whole Foods on Canal St., I was pleasantly surprised to find Prairie Fruits Farm chevre had made its way into the major market! Standing next to me happened to be the speciality (cheese) buyer, Laurette Stefani, when she noticed me snapping a photo. She furrowed her brow and asked what I was doing. So, Seth and I started to explan—we’re from Champaign, we love this cheese, Olympian Drive, Mayor Prussing, major fucking drama, goat lady, cheese is good in general. When my husband asked how it sells, Laurette pursed her lips and stared us straight in the face and said, “Honestly, we can’t keep up. It flies off the shelf. If you could, let them know they need more goats.”
