U of I grad student, Daniel Schreiber (completely unrelated to the Smile Politely editor and contributor Dan Schreiber), is starting a chocolate making company. He is raising money via kickstarter.com to purchase equipment, to eventually sell his homemade, fair-trade chocolate in local coffee shops.
