Kid Kits are coming back to the Champaign Farmers Market, starting next Tuesday, August 29th. If you’ve been to either market lately, you’ve probably noticed an abundance of things like eggplant, bell peppers, zucchini, summer squash, onions and tomatoes. I have so so much eggplant from my CSA right now. Well, a fantastic way to use all of those things is making ratatouille. Bonus: It’s a whole Disney movie that you can watch to get trick kids…I mean get kids excited about eating all of those veggies.
The kits are free, and will include all of the ingredients needed to make the included recipe. You’ll find a step by step video on The Land Connection’s YouTube channel. There will also be kid kits distributed at the September 26th and October 31st markets.
