The land and buildings on the corner of First and Green Street are planned for demo and upgrade in 2024, and this includes the Maize on Green location where the restaurant first opened in 2011. In twelve years, Maize has become one of C-U’s best restaurants and has expanded to a second location, a food truck, and a quick-service Union location opening this fall. So what does the upcoming construction mean for Maize on Green?
“We fully expect to remain there through 2023, and that’s all we can say to speak to truth. While this building has been home and obviously a lot of memories made and how much it means to the campus student body from years previous, we expect to have a few specialized events for different graduating years and a proper sendoff for all those that supported us in the early years,” said Adam Lopez, operational director for Maize.
Though the restaurant will close when demolition begins, the Maize truck will be parked for service in front of the build during construction.

It’s sad to lose a space like this, one we’ve all been happy to squish into for delicious Mexican food. If you want to experience the space as it is right now, do it before the demo.
