This Fiala Brothers grilled cheese lives in my head now

A short while back, I made a trip over to Bloomington-Normal, taking a stroll in Uptown Normal where there are a ton of shops, a lovely theater, restaurants, coffee shops, a sick roundabout(!), and more. Fiala Brothers Brewery & Beer Hall has been around for about a year now, and knowing their connection to Champaign-Urbana (the owners also own local DP Dough franchises), I wanted to stop in for lunch.

I ordered the All American (American, pepper jack, and havarti cheeses, sliced tomato, and bacon, $6.50), adding a garlic parmesan crust ($1.00) with a side of house tomato soup ($3.00). It was truly sublime, and everything I could’ve wanted in a grilled cheese. The photo speaks for itself. I was in and out of there in no time, a plus if you’re looking for a quick lunch that’s delish.
